0/200Veg Pakora is India's universal comfort snack — a dish made in virtually every Indian household when the rains come or guests arrive unexpectedly. Thin slices of onion, potato, cauliflower, spinach, and green chilies are dipped in a thick, spiced chickpea-flour (*besan*) batter seasoned with turmeric, red chili powder, carom seeds, and asafoetida, then deep-fried until golden and crisp. The beauty of pakoras lies in their adaptability — every region, every household, every street vendor has a version. In Punjab, they're thick and hearty; in South India, they're lighter and crispier. At Raunak, we follow the North Indian style — robustly spiced, generously coated, and fried to a deep golden brown.
Chickpea flour is gluten-free, high in protein, and rich in folate. The mixed vegetables provide a spectrum of vitamins and minerals — vitamin C from cauliflower, potassium from potatoes, iron from spinach. The dish is vegetarian and vegan (when fried in oil).
