Paneer Biryani — Marinated Cottage Cheese Dum Biryani with Mint & Fried Onions at Raunak, Milpitas

Paneer Biryani is the vegetarian answer to the grand Mughal biryani tradition — a dish that proves the dum technique is as magical with dairy as it is with meat. Paneer, the fresh, unaged cottage cheese of India, has been a cornerstone of North Indian vegetarian cooking for centuries, particularly in Punjab and Uttar Pradesh, where it is made fresh daily by curdling milk with lemon juice or whey. The concept of folding paneer into a layered, dum-cooked rice preparation emerged in the royal kitchens of Awadh (modern-day Lucknow), where vegetarian feasts were crafted with the same reverence and complexity as their meat counterparts. At Raunak, paneer cubes are marinated in a spiced yogurt base with ginger, garlic, turmeric, and garam masala, then layered with basmati rice infused with saffron, generous handfuls of fresh mint and cilantro, golden fried onions, and a blend of whole spices including bay leaf, cloves, and green cardamom. The pot is sealed and dum-cooked until the paneer absorbs the aromatic flavors and the rice achieves its signature fluffy, separate texture.

Texture & flavor

Paneer biryani offers a unique textural contrast — the paneer cubes are firm yet yielding, with a slight squeak that gives way to a creamy, milky interior. They absorb the marinade and spice flavors beautifully while retaining their own gentle, dairy sweetness. The rice is fragrant and fluffy, layered with the caramelized sweetness of fried onions, the brightness of fresh herbs, and the warm depth of whole spices. The raita complements the paneer's richness with cooling, tangy freshness.

Nutrition notes

Paneer is an excellent source of complete vegetarian protein, calcium (essential for bone health), phosphorus, and fat-soluble vitamins A and D. It is lower in lactose than many dairy products, making it more tolerable for some lactose-sensitive individuals. The mint and cilantro contribute antioxidants and digestive aids. Basmati rice provides energy with a lower glycemic index.
