A festive sweet made with moong lentils, ghee, and cardamom

0/200Moong Dal Halwa is a labor-intensive festive dessert from Rajasthan and Gujarat, traditionally prepared during winter weddings and festivals like Diwali and Holi. Unlike carrot or semolina halwa, this version is built on *moong dal* — split, husked yellow lentils — which are soaked, ground to a paste, and then slow-roasted in generous amounts of ghee for up to 45 minutes. This roasting is the soul of the dish: the lentil paste transforms from raw and starchy into golden, nutty, granular threads that resemble fine breadcrumbs. The technique is so demanding that the dessert is reserved for special occasions — a symbol of generosity and celebration in Rajasthani households. At Raunak, we honor this tradition. Moong dal is soaked and ground, then patiently roasted in pure ghee until it releases its signature roasted-nut aroma. We add warm milk, sugar, and green cardamom, and finish with toasted almonds and cashews. Served warm.
Moong dal is one of the most easily digestible lentils, rich in plant-based protein, dietary fiber, folate, and magnesium. The slow-roasting process, while adding ghee, also breaks down complex starches, making the lentils easier to assimilate. Cardamom supports digestion, and the nuts provide healthy fats and minerals. Though rich, the protein content makes this a more satiating dessert than flour-based alternatives.
