Fish Biryani — Delicate Fish Fillets Layered with Fragrant Saffron Rice at Raunak, Milpitas

Fish Biryani is a tribute to India's millennia-old relationship between its rivers, coasts, and rice. Along the Malabar Coast of Kerala, the riverbanks of Bengal, and the fishing villages of Goa, fish and rice have been the foundational pairing of daily life for thousands of years. The concept of layering spiced fish with aromatic rice draws from both the Mughal biryani tradition and older, regional coastal practices like the Bengali *bhuni khichuri* and the Kerala *fish rice*. The result is the lightest, most ethereal member of the biryani family — a dish that feels like a celebration without the heaviness of red meat. At Raunak, delicate fish fillets are gently marinated in turmeric, lime, ginger, and a mild green-chili paste to enhance their natural flavor without overpowering them. The fillets are layered with basmati rice perfumed with saffron, fried onions, mint, and a delicate spice blend of fennel, coriander, and cardamom, then dum-cooked briefly to infuse the rice with the fish's subtle, oceanic fragrance.

Texture & flavor

Fish biryani is the most tender and delicate of all biryanis. The fillets are flaky, buttery, and melt-in-the-mouth soft, offering a clean, mild flavor that lets the saffron and herbs take center stage. The rice is lighter and more fragrant than in meat biryanis, with a floral, almost perfumed quality from the fennel and cardamom. Each bite is layered — the gentle sweetness of the fish, the aromatic warmth of the spices, the freshness of mint, and the caramelized depth of fried onions. The raita adds a creamy, cooling finish.

Nutrition notes

Fish is one of the healthiest proteins available — rich in omega-3 fatty acids (EPA and DHA) that support heart and brain health, high in complete protein, and low in saturated fat. Fish also provides vitamin D, iodine, and selenium. Basmati rice has a lower glycemic index than many rice varieties. The turmeric and ginger in the marinade offer anti-inflammatory and digestive benefits.
