0/200Dahi Bhalla is the most beloved chaat of Punjab and Delhi — a dish so deeply woven into North Indian culture that no wedding, festival, or Diwali celebration is complete without it. *Dahi* means yogurt; *bhalla* refers to the lentil dumpling made from urad dal. The dumplings are whipped to incorporate air, deep-fried until golden, then immediately soaked in warm water to rehydrate them into soft, spongy pillows. They are then bathed in seasoned whipped yogurt and crowned with sweet tamarind chutney and spicy green chutney. Legend traces dahi bhalla to the Mughal era, where it was served as a cooling palate cleanser between rich, meat-heavy courses. Today it stands on its own as a chaat legend.
Urad dal delivers complete plant protein and is rich in iron and potassium. Yogurt provides probiotics, calcium, and vitamin B12. The dish is cooling and soothing — ideal for balancing spicier mains.
